What is the technique by which utilising a production switcher, a specific colour can be replaced with another image source ?

The technique is Chroma-key.
In chroma-keying, a subject is shot against a background of a single colour, usually green or blue. The production switcher removes every pixel of that colour and fills the space with another video source, which is how a weather presenter appears in front of a map.
A cyclorama is a large curved backdrop that gives the effect of a limitless background. A set unit and a flat are pieces of scenery; a flat is a framed panel used to build walls. None of them replaces a colour electronically.
