The odd one out is the Moon.
Earth, Mars, Jupiter and Saturn are all planets, bodies that orbit the Sun directly. The Moon is a natural satellite, which orbits the Earth.
Mars, Saturn and Jupiter each belong to the group of planets, so none of them is odd. Jupiter and Saturn being gas giants while Earth and Mars are rocky splits the group two and two, so it cannot single out one member, which is why the planet-satellite difference is the intended one.
