Case hardening during drying refers to
Answer: B
Correct answer: A dry skin trapping moisture inside
Case hardening occurs when the surface dries far faster than moisture can move out from the interior. The outer layer shrinks and its structure closes up, forming a skin of low permeability that traps moisture within the product.
The consequences are practical: drying appears to finish while the centre is still wet, and the product may later spoil or go mouldy in store as that moisture redistributes. The remedy is to dry more gently at the start - lower air temperature, higher humidity, or intermittent drying with rest periods that let internal gradients relax.
