Which statement about deodorisation is TRUE?
Answer: C
Correct answer: It is carried out under high vacuum
Deodorisation runs at a few millibars absolute. The vacuum lowers the boiling points of the free fatty acids, aldehydes and ketones enough that stripping steam removes them at 240 to 260 degrees Celsius, a temperature the triglycerides survive.
At atmospheric pressure the temperature required would decompose the oil, darken it badly and generate trans isomers. The other two options name different steps: phospholipids are removed by degumming, and activated earth belongs to bleaching.
