The mother thanked God for sparing her children.
Her only words in the poem are 'Thank God the scorpion picked on me and spared my children.' She is thankful that the scorpion bit her and not them.
Her recovery is not what she is grateful for in the lines quoted, and the poem says nothing about a doctor. 'Escaping the scorpion's bite' is wrong because she was bitten.
