Which condition would most likely cause an alcoholic fermentation to stop early?
Answer: B
Correct answer: Excessive temperature
A stuck fermentation most often follows overheating, which stresses and eventually kills the yeast - and since fermentation is itself exothermic, a large vessel can run away without cooling. Nitrogen deficiency is the other common cause. Excluding air is normal and desirable once fermentation is under way, and a steady moderate temperature is exactly what is wanted.
